Red Beans & Rice


I love red beans & rice. I grew up eating it from a (simple) recipe my mom made up when I was younger.

Ingredients
2 cans VanCamps New Orleans style red beans (or any brand's New Orleans style--a must)
Package Eckrich sausage
Louisiana-style hot sauce
Minced dried onion
Rice (cooked)

Cut sausage into rounds and then fourths. Empty red beans into large skillet and add sausage. Shake 5ish shakes of hot sauce and 3 or 4 of the onion. Cover and cook on medium-high heat 10-15 minutes, stirring every 3 minutes or so. Uncover and turn down heat to low for 10 minutes until sauce thickens. Serve over hot rice. A guilty treat!

Just wanted to share...

 ...a simple page I threw together a few weeks ago. I only have one page from our Hawaii trip, so I've been trying to work on that! I have some journaling to add, but I think I will write it by hand after I have it printed.

An assortment of thoughts.

Hello blogland! I have been busy lately...getting excited about moving, working, trying to clean, reading, and just enjoying life! Subbing has been great lately, as I have mainly been at one school where the kids and teachers know me.

I never made my baked ziti last week, but it is in the oven now and smells so delicious! We're also making pepperoni deep dish pizza and apricot chicken this week. I want to find some new and tasty slow cooker recipes (preferably that don't require browning meat first!). Any suggestions on a good cookbook or website? 

Still working on my quilt. I am almost done cutting the print fabrics, and will be buying a solid to begin cutting soon. This summer I plan on getting more done with that.

Time flies when you're having fun...


Seriously, we are almost halfway into 2011...and I cannot believe how fast time whizzes by! Tyson and I will be married a year in just a few weeks (how crazy is that?!), and then we'll be moving into a new apartment. We also only have a few more weeks of school (woo hoo)!

This week is pretty boring dinner-wise (last week was too, with Tyson being out of town for most of it!). We have the usual Monday routine, and I am making baked ziti tomorrow night. Our small group is having a potluck/game night this week, and we're bringing my family's corn casserole recipe and some coleslaw. We'll both be out of town this weekend, so that's pretty much it...we need to clean out our fridge and get rid of leftovers!

I think the next thing I will bake will be this chocolate chip sour cream coffee cake...YUM.
