It's Monday, so I will post.

Hello! Life has been zooming by, and tomorrow is the first day of March. Where did the time go?!

Menu Planning Monday
monday :: baked potato night
tuesday :: pork tenderloin with a spicy honey glaze, salad, and another side I have yet to pick.
wednesday :: leftovers or maybe BLRs (didn't have them last week)
thursday :: chicken parmesan (I made cheese tortellini last week instead of the chicken parmesan!)
friday :: bay area burgers

This weekend was pretty excellent. Friday evening we went to the Chris Tomlin concert in The Woodlands with another couple in our small group. I feel like words can't even describe how amazing it was...it was just really neat seeing so many people worshiping and enjoying being in God's presence. At one point I noticed a group of high school guys (I noticed them because they all had sideways hats and low pants) going nuts jumping around and singing. It was just really cool.

Then on Saturday I slept in and watched basketball with Tyson/read on my nook. One of my long distance friends was in town, and the three of us ventured to Katy Mills in the afternoon. Afterwords, Tyson and I had a spontaneous date night...We were going to eat dinner at Potato Shack when I spied the wine bar in the same parking lot with happy hour specials. I tried calamari for the first time...pretty tasty! And not revolting at all.

And then Sunday was church, relaxing, and a few errands. Pretty productive. My tummy is rumbling so it's I think it's time to eat. :o)

I've been busy...

...working on Project Life. I think I've talked a bit about it here and there, but it's really gotten me into scrapbooking on a more consistent basis. I've been trying to take a photo (or more) a day, and been having a lot of fun getting creative in capturing our lives.

...cooking. Trying out and looking for new recipes. Made this Spicy Garlic Salmon last week and it was seriously good. Looking to make your own salsa? We made Pioneer Woman's (and it makes a LOT of salsa!) and it was soooo tasty. It actually got better a few days later!
...reading! My nook has gotten me reading so much more. Having multiple books with me all the time is handy and a lot of fun. My most recent read was Water for Elephants (highly recommend!) this weekend in anticipation of the movie coming out in April. Up next is Girl with the Dragon Tattoo.

Menu Planning Monday Tuesday
monday :: baked potato night
tuesday :: Tyson cooking pork chops with raspberry chipotle sauce, rice, sauteed zucchini, and salad
wednesday :: BLRs
thursday :: beef enchiladas
friday :: out to dinner before the Chris Tomlin concert
saturday :: chicken parmesan, or maybe something else if I see a good recipe!

In 2011, I want to make a quilt. I think I'm going to order this book (thank you Christmas gift cards!) to get started. Does anyone out there have any advice?

Obligatory New Post

Has it seriously been three weeks since I last posted? Ridikkulus! And already February...where did January go? Tyson has been busy working, and just completed his first full marathon in the rain last weekend. His time was right around 4:10, and I think he's already planning his training schedule for his next marathon attempt! My parents and I drove around Houston to meet him on the course, which was way more difficult than I thought.
Mile 17

Nothing too much else is going on...I have been just working away and cooking/looking for new recipes. Are there any must-try recipes out there? Here's what we're having this week (mostly favorites this week):

Menu Planning Monday
monday :: baked potato night
tuesday :: red beans & rice
wednesday :: leftovers
thursday :: beef & cheddar soft tacos
friday :: lasagna
saturday :: chicken parmesan
