Today Tyson rationalized that I did not specify any eating out, only at dinner. So we went to Potbelly after church. 

Week one of the cooking project went very well! I was a little iffy on the stuffed zucchini (thus no posted link), but Tyson liked everything. The pizza last night was pretty much amazing. Ty Ty said it was the best cheese pizza he's ever eaten...which, now that I think of it, doesn't say much because he hardly ever eats plain cheese!

Here's what is on deck this week:

tuesday :: baked pork chops with mashed red potatoes and corn
wednesday :: copycat chick-fil-a nuggets
thursday :: leftovers! I also have to make king ranch chicken for a school luncheon...I don't even like it!
friday :: lasagna (recipe from the side of the skinner pasta box)
saturday :: Tyson will be out of town, so I'll probably just have a baked potato :o)
sunday :: grilled sriracha turkey meatballs with rice and sautéed zucchini

About to start the last six weeks of the school year...crazy how fast time is flying!

Food.

It's been a long week. I'm not sure why, as today was a half day, but it was pretty brutal nonetheless. Tyson and I joined my parents in visiting my grandparents for Easter weekend.


Iris had a wonderful time too. 

Since Monday, we have been participating in a self-induced 20 day cooking challenge. We are entirely way too impulsive with our eating out, so it's been great getting into the habit of actually cooking. Here's what we've made this week:

Monday :: beef enchiladas (recipe from my college roommate's mom)
Tuesday :: roasted chicken, green beans, and red potatoes 
Wednesday :: Stuffed zucchini and quinoa
Thursday :: apricot chicken, rice, and roasted asparagus
Friday :: ginger and cilantro baked tilapia, rice, and asparagus
Saturday :: Four cheese white pizza
Sunday :: burgers with homemade wheat buns

So far, so good...Tyson has an appointment to get his blood taken tomorrow, which is definitely a fear of his. We shall see how that goes! I am currently enjoying The Sound of Music whilst my husband snores on the couch... "please, Captain, love them more!" Oh, how I love this movie! I adore low-key weekends at home.

Weekend in Photos: Spring Break Edition

 This weekend we went to the ranch in celebration of Tyson's dad's birthday. Brody likes to spend his time in mud pits. The cows are interested in his size and preference of hang out locations.

 Isn't he the cutest?!? FYI, he got a bath promptly upon arrival at my parents'.

 This little herd is adorbs. Tyson's dad hand-fed them last summer and got them more used to humans, so you can actually walk up to them and pet them.

 They wanted to be friends. Unfortunately my friendship is dependent upon being a photographic specimen.

 I think she was hungry. I was most amused by Brody chillaxin' in the corner.

 It's like a bovine posse.

 I dubbed #68 leader of the pack and my fave.

 I think I surprised him (isn't he the cutest?!?).

 He smelled so bad.

 I became best buds with this one. Until she ran away from me.

 They were actually staring at Brody. Don't let their attentiveness deceive you.

 Tricky Ricky still maintains his awesomeness!!


 I don't know why, but this reminds me of The Outsiders. I like to think they are Dally (obviously because he's alone!), Two-Bit, Soda, and Pony.

 This one can be Steve/Tom Cruise.

 Have I mentioned I love this kid?!


I think he spent the entire weekend in puddles.

I am a professional spring break-er.

This week marks the 21st Spring Break of my life. SB is a fave because it's short and sweet. Also, your husband can't get too mad at you for relaxing a lot because you're going right back to work next week! ;o) My week has entailed a few adult beverages, Dog the Bounty Hunter, coffee every morning, a haircut (four inches, yeehaw!), a lunch and movie outing with Mommy (This Means War--totally loved it), quality time with the Brody Bear, grading papers in a waiting room while Tyson got a root canal, and other miscellaneous adventures.

 Brody loves Spring Break too.

Adele Pandora station + coffee are a requirement every morning!

I didn't do that awesome at picking crazy elaborate dinners, but here's what we had...
monday :: baked coconut shrimpcauliflower mashed potato puree, and coleslaw (shrimp was decent, puree was yum!!)
tuesday :: Whataburger for Tyson while I hung out with Mom and Dad :o)
wednesday :: slow cooker baked potato soup (super easy!)
thursday :: crockpot pork carnitas (yum!)

We are one week away from Hunger Games! I almost bought some of the nail polish yesterday at Ulta but stopped myself in time.

Has it seriously been a month?

Again, bad blogger. My camera battery has not been charged in quite some time. Sad day. But it is now Spring Break, so I am enjoying a cup of coffee and perusing the web for those more tedious/time-consuming/messy recipes that I overlook during the normal week. I'm also listening to my Adele Pandora station, and let me tell you--it is quite lovely.

 My parents finally got a dog! They have been talking about getting one since my tenth birthday (I got my ears pierced instead...lame.). They rescued Lady Iris in January, and we just love her. Except when she's stealing Brody's toys. She has a lazy eye (my mom pointed out that I used to as well) and a tattoo. 

Tyson finished a half marathon in College Station last weekend. He beat his previous two times! The weather was pretty awesome and we got to spend time with Heather and John (even though they won two games of badminton...rematch please!). We might or might not have indulged in breakfast tacos from Rudy's (seriously cannot wait for the Katy location to open!) AND Harvey Washbanger. And Yogurtland. Twice.

Mainly food related.


I have been a very neglectful blogger lately. But I just haven't felt very blog-worthy (blog-able?). I finally finished the Game on challenge (we won!) though, so I am feeling like I might actually blog some food and picture fun. Anyways. Here is a random list for now about what's been going on in the land of Hann(s).

1. I lost 9 pounds doing the game! And another .5 at the end of last week. Hizzah!
2. I probably gained 2 this weekend eating at my parents'. :o(
3. Brody ate some of my students' projects last Monday while I was at school. That's all I can say about that.
4. I made this Mexican Pulled Pork last Thursday, and it was pretty much awesome. But I love almost anything in the slow cooker.
5. Bread is kind of a love of mine. Whole grain is the healthy way to go, but nothing beats some fluffy white bread or cheddar bay biscuits or maybe a good garlic bread.
6. My sister-in-law and her husband are coming to visit us this weekend!! I am so excited!! :oD Also kind of sad though, as I wish we had a house for visitors. Soon though (hopefully)! Their presence is an excellent excuse to stock up on some vino...I wonder what I should purchase!
7. I downloaded "The Essential Michael Jackson" this weekend.
8. About to make these cookie dough stuffed cupcakes for a sweet treat for my team.
9. We have a realtor, so I guess we are officially looking for a house now!
10. Not really a fan of Glee anymore, but I still DVR and watch a few episodes at a time when Tyson's out of town. Lea Michele's version of Without You? LOVE IT!!!
